M&M On Tour: the Road Trip

August 12, 2015 by Mackenzie

IMG_9397

I can’t believe I leave in just a little over a week! That is, if everything comes through… ten days from today, we’re all supposed to be boarding flights and jetting across the Pacific to arrive in Jakarta on August 23rd, except I still have yet to book my flight… or get my visa!

The other 34 Fulbrighters to Indonesia received their visa documents a few weeks ago – and for reasons unknown to me – the documents I needed to send to the Indonesian Consulate took ages to acquire. We needed a letter from the school we are teaching at saying they are sponsoring our stay, but my school was many weeks delayed in sending me my letter. But… I finally received the documents on Monday and I overnighted them to the San Francisco consulate and hopefully I’ll receive my visa in the next few days and can then book my flight! It might not happen until a few days before but I know it will all work out – whether I arrive a few days after everyone else or end up getting a flight out on the 21st.

In the meantime, I’ve left St. Louis and after an epically long road trip west – I’m back on the west (best) coast. My friend Martha, whom I met and interned with in DC last summer, flew out to St. Louis to drive back with me. We had a fabulous couple of days in St. Louis before loading up my jeep and beginning the drive.

We strolled through the Missouri Botanical Garden and went to the jazz in the garden with Abby and Jack.

This Just Got Real

June 15, 2015 by Mackenzie

I received my site placement last week. In about three months I’ll be settling in to my new home in Palangkaraya! Where in the world is that, you ask? Yeah, me too.

Map of Indonesia

Because Indonesia is 12 hours ahead (of US central time), most emails from AMINEF (the organization in charge of our grants) arrive in the middle of the night and are a fun surprise to wake up to in the mornings. There had been some rumblings between the other Fulbrighters that we would receive our placements soon but I was still shocked when I refreshed my email and saw an email from AMINEF with the subject heading, Palangkaraya. (And yes, I have a horrible habit of checking my email first thing in the morning… before I’m even out of bed. That will change soon, as I don’t believe I will have much internet access in my new home!)

I quickly scanned the email, flew out of bed to find my laptop, and searched Palangkaraya. While I’ve been to Indonesia before, Palangkaraya didn’t ring a bell and I couldn’t have guessed where it was. Well, it’s smack in the middle of Borneo (also known as Kalimantan in Indonesia), the third largest island in the world (Madagascar is fourth for reference). Borneo is divided among three countries, Malaysia, Brunei, and Indonesia. Almost 3/4 of the island is Indonesian and is divided into five Indonesian provinces. My city, Palangkaraya, is the capitol of one of these five provinces, Central Kalimantan. From what I can tell (from trusty ol’ Wikipedia), Kalimantan is a jungle island and I’m going to be smack in the middle of it (kinda, actual more on the southern end of the island, just north of Banjarmasin).

Map of Kalimant

It’s a bit different than what I’d expected, considering I had applied to a country of 17,000 islands. My placement is about as far away from water (besides a river) as you can possibly get in Indonesia, which I find fairly amusing.

Having been to Madagascar and traveling through a lot of that island/jungle/rainforest country, I can picture what my new home will be like… I think. Honestly, I have no idea but google maps and random youtube videos that I’ve found have been great and I can piece together those, with my prior experience in Indonesia and Madagascar. I should probably stop doing this as I’m probably widely off with my expectations (both high and low!) but I can’t help myself trying to imagine what this journey will look like.

P

I was also given my school placement – but as neat as it is to know, it doesn’t really mean anything to me at the moment. None of it really does but I’m sure after our pre-departure orientation in DC next week, I’ll know a lot more! At least I’m hoping so…

With ten weeks to go, I figured its probably time I start learning Indonesian. Realizing that I will be living in a fairly remote city, I don’t expect many people to speak English, so if there’s little else I can do to prepare in the meantime, I can at least start learning some Indonesian so I’m a little more comfortable when I arrive. Thus, I’ve brought out the flashcards and purchased two Indonesian language books and I’ll see how much I can teach myself!

Lastly, and this one is for my grandparents… Wash U sends a daily (weekly in the summer) news bulletin out to the whole campus community. And yours truly got a shoutout this week – here’s the article.

Selamat jalan, teman saya! (Goodbye, my friends!)

(Thanks google images for the pictures… I’ll have my own soon enough!)

WUSTL Graduation and the Start to Summer

June 10, 2015 by Mackenzie

It’s mid-June, 100 degrees in St. Louis, and I’m still adjusting to this post-college life of no stress, no deadlines, and decent sleep! The last few months passed in a whirlwind of excitement as I learned of my Fulbright grant, finished my final college papers, and walked across the stage as a proud graduate of Washington University in St. Louis. It’s hard to put into words how fulfilling and happy the last year has been – I’ve found new passions, established old ones, learned more about myself, made new lifelong friends, deepened relationships with mentors, and am so excited about the future, whatever it may hold.

I haven’t blogged in ages, I know – but blogging didn’t hold the same charm for me as it used to. I started this blog as a means to share my life with family and friends but with all the other social media outlets out there, I’ve felt less of a need to blog in order to stay connected with them. This blog also used to be about cooking and baking and the joy I found in the kitchen – but in the last six months, I think I’ve made cookies once, roasted a lot of brussels sprouts, and made countless batches of hummus…but that’s about it. My meals are quite simple these days but that’s how I prefer it at the moment and hey, I’ve lost a few pounds not baking all the time!

I know I’ll start blogging regularly again when I leave for Indonesia – this blog is how I plan to share that experience. I’m growing increasingly excited about Indonesia, although I still don’t know much about where I will be or what my day to day will look like. We are supposed to hear soon what our placement will be and then I’ll know which of the 17,000 islands I’ll be living on! We are also all flying out to DC in about ten days for the Fulbright Pre-Departure Orientation. I’ll get to meet the other ETAs headed to Indonesia and will hopefully learn a lot about what my year will look like! I’m also thrilled to be headed back to DC and will get to see a lot of my friends and coworkers from last summer.

In the meantime, I’m staying in St. Louis for the remainder of the summer. It was wonderful to have my family in town for graduation – here are a few pictures from the weekend.

A fabulous night at Taste!

In addition to the craziness of the end of senior year, I also began working at Taste, a cocktail bar/restaurant in the Central West End. When I started, I had no idea what I was getting myself in to or how much I would learn or how much fun I would have… but it has been an absolute blast and I loved it so much I decided to stay on for the summer before heading to Indonesia! I work at the restaurant most evenings and have most of my days open to read, sleep, run, meet friends for lunch… it’s been an incredibly relaxing couple of weeks but as nice as it is, I’m getting a little stir crazy and ready for some intellectual stimulation again 🙂 But for the next seven weeks, I’m going to enjoy these free days while I have them and then I’ll be off to the other side of the world!

Off to Indonesia!

March 21, 2015 by Mackenzie

fulbrightlogofordreamweaver_1_0

Hello, hello! Gosh, it’s been months since my last post! I decided to take a break from blogging for a few reasons – I was burnt out constantly writing and unsure of the direction I wanted to take this blog; I quickly became overwhelmed with school and academics – my thesis became a much bigger beast than I had expected; and I haven’t been cooking as much so I don’t have many new recipes to share!

I was also preoccupied with working out my post-graduation plans – because oh my gosh, I graduate in less than two months!! I cannot believe how fast this semester has flown – I don’t want it to end!! It’s been a wonderful four years and I’m sad to see it ending so soon. However, I’m thrilled that as of last Friday (the 13th, mind you!) – I have a plan for the next year!

About this time last year, I attended a workshop on post-grad fellowships/scholarship opportunities. I knew about Fulbright and know a few people who have done it – but after this workshop, and the prodding of a few professors… I decided to apply. I spent last summer drafting my application – it’s fairly substantial with several essays, letters of recommendation etc. I submitted it in early September, was interviewed a few weeks later and then sat back and waited! Simultaneously, I applied for a similar fellowship through the Luce Foundation. With both applications submitted, I finished the fall semester and continued to wait.

In January, I heard back from both Luce and Fulbright that I had made it to the final round of each fellowship competition. I was thrilled! Luce invited me to New York in February for the finalist interviews and with Fulbright, my application moved on to the last round and I didn’t have to do anything but sit tight. While I was preparing for the Luce interviews, I also had to complete my senior thesis – but I’ll save those details for a later post – but let’s just say, it was a stressful, sleep-deprived couple of weeks!

The Luce interview weekend was unbelievable. I was honored to be there competing for the fellowship among 14 other outstanding candidates. The interviews went very well and I loved the whole weekend. Unfortunately, I found out a week or two later that I didn’t get it – I was disappointed but still grateful for the experience and the work I had to put in to preparing for the interviews. I needed to clearly articulate my career goals and the steps I needed to get there – but that meant I really had to narrow down my career choices and think through what I want to do. It was really helpful to be forced to do that mid-senior year and come out on the other end with stronger ideas for what I want to do.

With Luce off the table and no word from Fulbright yet (which could have been announced sometime between March and June) – I began to switch gears and planned to begin the job-search after spring break. Christy and I jetted off to Miami for a fabulous week – we attended the Clinton Global Initiative University conference the first weekend (see my post about last year’s experience here and my commitment to action here!)and then stayed in Miami for the rest of spring break – I’ll share pictures in another post!

However, on the last day of spring break, when we had just returned home – I received the email I’ve been waiting for, for months! I did it! I received a Fulbright Scholar Award to go to Indonesia next year! The Fulbright program is run through the U.S. State Department. It’s a prestigious award granted to US students and scholars to go abroad for a year and teach English or conduct research, while also representing the US as a cultural ambassador. Applicants apply to a specific country and apply either as an ETA (English Teaching Assistant) or with a research project. I applied to Indonesia as an ETA after spending five weeks there a few summers ago. I am absolutely thrilled to be able to go back and spend ten months living, learning and teaching!

For those of you with logistical questions – I depart sometime in August and I don’t know yet where I’ll be placed. I’ll most likely be teaching in a secondary school – assisting in English classes. At the moment, I’m planning to stay in St. Louis for the summer – I have a job here, volunteer work, an apartment, friends and all my stuff. I’ll likely head back to Seattle in late July/early August and if you are there – I’d love to see you before I take off for Indonesia in mid-August! There will probably be a trip or two in between – definitely to DC, maybe elsewhere…

I promise that I’m planning to blog more often, share more recipes and keep you all better updated on what I’m up to! The blog will likely begin to transition from a majority food blog/partial life blog to a majority life and travel blog/partial food and recipe blog. So if you want to stay updated on my travels around the world, subscribe in the box on the right and you’ll know when I post new things!

Much love, Mackenzie

Orange Cranberry Sauce

December 22, 2014 by Mackenzie

Orange Cranberry Sauce

Can you believe Christmas is this week? December has flown by and I can’t believe we’re here! It’s wonderful to be home with my family. I just finished reading The Vacationers and eh, it was okay. I had heard great things about it but it was pretty predictable… I guess I rarely read light, “beach” books like this so I’m not used to the lack of a complex plot 🙂 On to the next book on my list! Anyone have any recommendations to add to my list?

I have a quick post to share today – cranberry sauce is one of my favorite side dishes during the holidays. Thanksgiving or Christmas… I just love cranberry sauce on turkey or on sandwiches stuffed with leftover meat. So if you’re making some kind of meat for Christmas – why not try this Orange Cranberry sauce to go with it? It’s festive and delicious! We originally got the recipe from about.com  and I’ve been making it now for several years and I love the flavor combination of sweet oranges, tangy cranberries and nutty toasted pecans!

Merry Christmas! Enjoy the time with family and friends!

Peppermint Bark Popcorn

December 18, 2014 by Mackenzie

Peppermint Bark Popcorn

I’m excited to be writing this post from Seattle! Woohoo! After a long day of traveling, with 2 flights, 3 mean flight attendants, 2 nice flight attendants, 1 allergic seat mate and finally 2 nice guys who put up with a sleepy, smelly puppy… we made it! She’s happy to have a yard, I’m happy to have someone else to pass the responsibilities off to and we’re both happy to be home with our momma, Tom and Spence!

Home with the fam

Before I left, I had to proctor and grade exams for the class I’m a TA for. I knew we had a long night of grading ahead of us so I decided to bring this Peppermint Bark Popcorn as a treat to munch on all night.

Peppermint Bark Popcorn

I was inspired by this post from Plain Chicken and knew I had to give it a shot. I had tried making it a few times in the last week and each time was a failure! Either I didn’t let the oil get hot enough and burned the kernels before they popped or the white chocolate didn’t melt and I had clumps of chocolate in my popcorn (not complaining). But I finally figured out the trick of it and am ready to share the recipe with you! It’s really quite easy to make and is perfect for a family movie night or to wrap up as gifts for friends! Let me know what you think!

Peppermint Bark Popcorn

Peppermint Bark Popcorn with Homemade Popcorn
Recipe Type: Snack
Cuisine: Christmas
Author: Mackenzie
Prep time: 20 mins
Total time: 20 mins
An easy Christmas treat! I make my popcorn over the stove so I know exactly what is in it – no creepy chemicals please! Once you get the hang of it, it’s easy!
Ingredients
  • 2 tablespoons olive oil
  • 1/3 cup popcorn kernels
  • 2 teaspoons peppermint extract, divided
  • 3 oz candy canes, crushed
  • 1 cup melting white chocolate chips, (don’t use chocolate chips – they don’t always melt well. Buy the melting chocolate – it’s so worth it)
Instructions
  1. In a large pot with a lid, heat the oil over medium-high heat. Important: wait until it is HOT. Drop a kernel or two into the oil, swish it around so it’s coated, put the lid on and wait for it to pop. Don’t add the rest of the kernels until this one has popped and the oil is hot enough. Otherwise, you’ll just burn your kernels and they will never pop (trust me on this).
  2. When the first kernel has popped, add the rest of the kernels, swish them all around so they are coated in oil, put the lid on with a crack of air and watch them pop! When they have slowed down, turn the heat off and shake the pot to get the last ones to pop. Pour 1 teaspoon of peppermint extract over the popcorn and stir it in with a big wooden spoon.
  3. While the popcorn is popping, remove the wrappers from the candy canes. Crush them by hand or in a food processor (so much easier). Pour half of the crushed candy canes over the popcorn and stir to mix.
  4. Melt the chocolate according to package directions. Pour the remaining half of the candy canes into the white chocolate and stir. Pour the melted chocolate over the popcorn and mix well.
  5. Cover a baking sheet with parchment paper and spread the popcorn over it to allow the chocolate to harden.
